To produce the base wine from the red BAGA grape variety, the red grapes are first pressed directly to obtain the purest possible must. This is followed by cold settling and a long fermentation of the pure must at a controlled temperature. After fermentation is complete, the wine is aged in the bottle on its fine lees with minimal sulfites until bottling. During this phase, the wine ferments slowly and at cool temperatures in the bottle. This process extracts the natural CO2, which creates the fine bubbles.
After fermentation was complete, the wine was stored in the bottle in contact with the fine lees for at least two years, which greatly influenced the taste, preservation of the fruit, increase in volume, complexity and improvement of the texture of the finished sparkling wine.
On the nose and palate, it presents complex roasted notes, ripe white fruits, and dried fruits. On the palate, it is a fresh and complex sparkling wine, where structure and volume stand out, with a good balance between body and acidity. The finish is creamy and fresh.
